Healthy Vanilla Coconut Ice Cream

Eating healthy never tasted so good! 

Over the next few months Coach Scott and Body By Fadi will be delivering an amazing new series of healthy, raw and even vegan cuisine that is sure to set your taste buds afire and ignite your cooking creativity.

In today’s installment we show that ice cream can be healthy and delicious. Coconut is loaded with healthy fat yet it is lower in calories than cow’s milk. Coconut milk is also easier to digest and has fewer calories than regular ice cream.

Healthy Vanilla Coconut Ice Cream

  • 1 cup raw liquid coconut milk*
  • 4 cups raw frozen coconut milk
  • 1 to 2 tbsp vanilla extract
  • 2 to 3 oz turbinato sugar (or any sweetener of choice)**

Blend all ingredients on high speed in a high speed blender(VitaMix, Blendtech, Ninja, Health Master, Nutri Bullet). Recipe ready in 30 seconds to 3 minutes depending on which blender you will be using.

*If you can not find raw coconut milk, then make your own!

Blend 2 to 3 cups of fresh coconut meat with 1 to 2 cups of filtered or spring water until smooth in a high speed blender. Add flavors and sweeteners as desired.

**Turbinato sugar is less processed than toxic white sugar but other sweeteners like dates, honey and stevia can also be used to sweeten your ice-cream.

So we know what foods not to eat… or do we…. If you did not read our previous posting on “The Top Foods to Avoid” then go do so when you have a few free moments. If you have then you have probably been waiting to hear what the best foods are for the body.

Your wait is over! I have inserted a simple chart which does a decent job of showing what foods are best for sustaining a long and healthy life. The chart represents what is called a Raw Food approach. The term “Raw” indicates that the food has not been heated above 102 degrees but typically means it was eaten direct from the plant.

I am not suggesting that living a Raw lifestyle is the only lifestyle to live but it is highly recommended to pursue a 70% to 90% “Raw” lifestyle.

Also, I have found that while it is possible to obtain adequate protein from plant sources, it can be very difficult and time consuming. Don’t fall into the trap of eating nuts as your protein source as nuts contain omega 6 fats. Instead shoot for a variety of protein rich items like algae, sprouts, legumes, seeds & nutritional yeast as these items contain healthy omega 3 fats.

If you do eat meat then try consuming fish as your primary meat source with only small amounts of beef. Make sure these items are grass fed and or wild caught. Keep your animal protein below 5% and you just may be able to avoid some future cancer concerns. (Read the China Study by Colin Campbell for more info on proper animal protein intake)

Lastly, this pyramid is a great guide but I would make a few minor additions: 1) Add Algae underneath the protein block 2) In order to avoid B-12 deficiencies make sure to ingest nutritional yeast or other items that have added vitamin B-12 3) In addition to including more algae to your diet I would also add more seaweed.

*Hydrogenated & Partially Hydrogenated Oils
*Junk Food: cakes, candy, cola, fast food, potato chips & etc.
*Chlorinated / Fluorinated Water
*Excessive Alcohol
*Pasta and Bread
*Fried Food

In summary, Stop The Madness – You don’t need a diet program simply stop eating processed foods!

Eat REAL Food (vegetables, fruits, beans/lentils/legume/seeds and in smaller quantities grains and lean meats) and move your body and your life will change!

The Decision That Changes Everything

Finding your way to total health is similar to taking a new road trip. It first starts with a decision to go somewhere.

Once you have decided, then what’s next? In the case of your adventurous road trip it usually starts with either an old fashioned map or GPS to plot point A to point B. When this is done you will see each turn and how long it takes to get to your destination.

Now unfortunately, your wellness journey like the very road you travel can sometimes throw up roadblocks and detours no matter how well you plotted your course. This is usually when that wonderful and sometimes irritating GPS voice usually pipes up and states “rerouting”.

You may not have a GPS to help you decide when to reroute but your wellness journey is similar and can be rerouted when you hit a similar roadblock.

So how do we know when to reroute? Like all journeys it starts with a decision.

Decide
a) Decide to live a purpose filled life. Decide to make a change for the better. Decide to make changes that will improve the quality of life for you and for the world around you.
b) Decide on and create a “Road Map” and a goal plan to get you to that higher level of living. This should include a properly balanced plan for all 4 areas of your wellness journey (Body / Energy / Environment / Mind)

Commit
a) Commit to your plan and stick with it. (Remember that the journey of a thousand miles starts with the first step and to reach the thousandth mile we must keep walking.)
b) Commit to a success partner / mentor / coach / accountability partner. (Partners can keep us motivated and on track even during the days we are feeling low and not motivated.)

Modify
a) Continually listen to your inner voice and listen to your body. Continually modify your goal plan and your “Road Map” based on how your body, your life energy and your mind is responding.
b) Modify your workouts, your eating plan and your spiritual walk as needed until you find the proper path that fits you. Then repeat steps 1 and 2 whenever you reach a plateau and feel stuck or whenever you are ready to establish new goals that will take you even higher!
